Healthy No-Bake Energy Bites

I am constantly looking for snacks that both the kids and I can enjoy without being awful for us.
This is a great snack if you’re craving something sweet, yet filling. Of course, just one isn’t enough, but that’s neither here nor there.
I’ve been using these for on the go, or a quick snack before the kids go outside to play.
Plus the beauty of this of this recipe is that you can swap out ingredients.
I typically don’t like coconut, but in this recipe, you can hardly taste it and it adds a really nice texture. So give it a try before you go changing the ingredients.
Here’s how you make it!
Ingredients
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup chocolate chips (I used dark chocolate)
1 tsp vanilla
Directions
In a large bowl, mix all the ingredients together. Tip: I heated up the honey for 15 seconds prior to mixing in. It made the process much easier.
Place the bowl in the refrigerator for 30 minutes and then roll into small balls. I kept mine about 1″ in diameter. This yields approximately 20 bites.
Store in an airtight container in the fridge for up to a week, if they even last that long.

These are awesome. No joke. I’m going to pin this a thousand times.
Okay, just once. But the thought is the same.
Are these soft or hard? I guess what I’m getting at is, how old does my kid have to be to safely eat them? I guess he’s not supposed to be having peanut butter or honey yet anyway, so this is kind of a pointless question. Anyway, I’m curious!
They’re not too difficult for kids to eat, depending on the age. I would say that if they can chomp through a chocolate chip cold, then they’re solid.
