Coconut Kettle Corn: a healthier option

I went and done did it. I made something I love dearly, made it healthier and now I’m in trouble.
Here I am. 8 months pregnant craving sweet things, no salty, no sweet, no SALTY. NOW.
So I figured, let’s do it all at once, shall we?
My husband will be thrilled.
If you’re like me and have tons of coconut oil laying around your house, you’re in luck. It’s what makes this.
What do I use coconut oil for, you ask? I use it to soften the leather on my couch, a diaper cream for my one year old and a whole laundry list of things. You should really google it.
But now, we’re talking about popcorn.
Make this.
It’s Friday, after all.

Ingredients
1/4 cup coconut oil, solid
1/2 cup popcorn kernels
1/8-1/4 cup white sugar
3/4 tsp sea salt
Directions
In a large saucepan with a lid, melt the coconut oil. When it’s melted, toss in a few kernels and cover. When they all pop, it’s hot enough to add all the kernels.
Dump in the kernels, making a single layer and do a quick shake to coat them. Sprinkle the sugar on top. I used 1/8 cup of sugar, and it tastes just sweet enough for me. If you like your kettle corn sweet, add in the whole 1/4 cup.
Cover and let pop for about 3-4 minutes. When the popping slows, quickly remove from the heat and immediately pour into a bowl. Do not let it sit in the pan or it will burn.
Sprinkle the sea salt on top (important!) and enjoy!






I would totally not be surprised if you were one of those coconut oil deodorant people. I tried. I really did.
