Happy Father’s Day to all you dads out there! This is a favorite of both my husband and father in law, who happen to be pretty awesome dads, so it only makes sense that I would make this today.
Don’t get me wrong, I love a good apple spice cake, but sometimes simple and classic is the way to go.
This is probably the easiest cake I’ve ever made and extra bonus, I had all ingredients on hand.
Ditch the box and mix this up!
recipe from Betty Crocker Cook Book
2 cups flour
3/4 cups sugar
3/4 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
2 tsp ground ginger
3/4 tsp. salt
3/4 cup brown sugar
1 cup butter, softened at room temperature
3/4 cup buttermilk
8 oz 1/3 less fat cream cheese
1 cup butter, softened
2 cups powdered sugar
1 tbs vanilla extract
Preheat oven to 350 degrees and prepare your cake pan with some nonstick spray. I used a 9 inch round cake pan, but a square 8×8 or 9×9 would work fine.
In the bowl of a stand mixer, combine all the dry ingredients and add in the butter, butter milk and eggs. Mix until it is light and fluffy, about 3-5 minutes.
Pour batter into the cake pan and bake for 50-55 minutes until golden brown and the top springs back after pushing down.
Let it cool in the pan for 10 minutes before using a rubber spatula to loosen the edges and transfer to a wire rack to finish cooling.
Prepare the frosting by combining all the ingredients in the stand mixer using the whisk attachment. Add in the powdered sugar a 1/2 a cup at a time to avoid a kitchen mess disaster!
Pour the frosting over the cooled cake and smooth using a rubber spatula.
