Fiesta Corn Dip

“What’s the corn dip recipe?”

I can’t tell you how many times that text has been passed between me and my sister before she finally wised up and memorized it and I finally wrote it down. We make it a lot, but it just doesn’t seem to stick in our brains… even though it is the easiest thing to make ever. It’s made an appearance at every bridal shower we’ve helped host (or that was hosted for us).

Mix this up, serve it with Fritos and enjoy!

 

Ingredients:
3 cans of Mexi-corn (or Fiesta Corn)
1 cup of Mayonnaise (note: I did this with the light Mayo once, not so good)
1 cup of sour cream (however, light sour cream seems to work just fine if you’re so inclined)
Chopped green onions – as many as you so desire

Directions:
1. Mix it all up and serve with Fritos.

Mexican Layer Dip

Some people call this seven layer dip, but as I only managed six layers, we’ll go with Mexican Layer Dip.

My mom’s birthday was this past weekend, and she requested and Mexican Fiesta menu. While my sisters volunteered to take on the enchiladas and side dishes, I volunteered to make dip and dessert. (More on dessert later).

I went to put olives on it as well, nailing down the signature seventh layer, but by the time I got them out, my family had consumed over half the dip. Oh well. So yea, you can add olives on top too if you can get them on before your family attacks!

Here’s how you do it:

Ingredients:
16oz. can of refried beans
1 packed of taco seasoning
8 oz. cream cheese (I used reduced fat and it worked great)
16oz. light sour cream
jar of salsa
2 cups of shredded cheese
chopped green onions
diced tomatoes
olives (optional)

Directions:

1. Mix beans and taco seasoning together. Spread on the bottom of a 9×13 dish.
2. Mix cream cheese and sour cream together, spread over beans.
3. Pour salsa over sour cream layer.
4. Cover with shredded cheese.
5. Add diced tomatoes, green onions and olives.
6. Enjoy! (I suggest eating this with Frito scoops).
