Banana Chocolate Chip Oatmeal Bread
October 29, 2012 in Breakfast, Cassie, kid friendly, Sweets
For the record, I don’t like banana bread. Even though there are at least 4 recipes for it on this blog alone. I, however, love this bread. It’s very subtle in the banana flavor, and huge in the chocolate oatmeal flavor.
This reminds me of eating chocolate oatmeal, to be completely honest. Plus it’s a quick bread, and who doesn’t love a good quick bread?
recipe adapted from tastykitchen.com
Ingredients
- 2 cups Whole Wheat Bread Flour
- 1 cup Rolled Oats (not quick oats)
- ½ cups Sugar
- ½ cups Brown Sugar
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Cinnamon
- ½ teaspoons Salt
- 1 ½ cup Buttermilk
- 2 whole Eggs, Lightly Beaten
- ¼ cups Unsalted Butter, melted
- 2 over ripe bananas
- ¾ cups chocolate chips
Directions
Preheat oven to 350 degrees. Spray a bread pan and set aside.
In a large bowl, whisk together flour, oats, baking powder, baking soda, cinnamon, and salt.
In a medium bowl, mix together buttermilk, eggs, butter, both sugars and bananas. Pour into dry ingredients and mix until well combined. Stir in chocolate chips.
Pour batter into prepared pan and bake at 350 degrees for 45 to 50 minutes until a toothpick inserted comes out clean.
Note: you can also use the batter to make muffins. The muffins will need to bake for about 20 to 25 minutes at 350.
