Amish Sugar Cake

Sometimes simple is the best way to go. Living in western PA, you come across a lot of Amish recipes. A few years ago I was a part of the Amish friendship bread baking chain mail thing. I’m so glad I did. It was amazing.
This is super simple to make and uses basic ingredients that most people have laying around their pantry. It’s super light, fluffy and makes a great coffee cake. I highly recommend if you’ve got company coming over and you’re in a pinch for something tasty to serve. And serve it warm!
Or just for yourself to gorge yourself with. Not that I’m doing that.
Here’s how to make it!

(makes two cakes)
Ingredients
2 cups flour
1 cup sugar
1 1/3 cups milk
1 1/2 teaspoons vanilla extract
1 tablespoon baking powder
1 egg
2 tablespoons melted butter
For the topping:
1/2 cup and 1 tbs brown sugar
1/3 cup melted butter
2 teaspoons cinnamon (or more)
Directions
Preheat oven to 350. Grease two cake pans and set aside.
Mix flour, sugar, and baking powder in a large bowl.
Add in the vanilla extract, egg, milk, and butter and stir with a wooden spoon until well mixed.
Divide batter between two cake pans.
Sprinkle brown sugar on top followed by cinnamon. Drizzle butter on top.
Bake for 20-22 minutes until center is set and cake is golden brown. Serve warm!
